This guy cuts the skin and it seems like this is kind of backwards, at least from how I do it. Jacque Pepin has a great video on how to do this. The breast is still whole when you roast it and the skin is not pierced like in this video.
I agree with matadormitten, This was terrible. Pepin did it beautifully.
