The automation he's on about is how logic controls things like the fader he is effecting with the Iphone.
You write it into logic in a similar way to how you write midi data and it plays back to you :)

I don't know what exact software he's using, but you can use TouchOSC on the iPhone and OSCulator on the Mac to do this. Thanks for the video leading me to other resources that explain how to do it.
