As a veteran of many boils, the key to the flavor is letting them soak. Drop the crawfish in and return the water to a boil, boil 3-5 mintues, then turn off. The key then is adding a half-bag of ice to the pot till the water temp is about 190. The longer you soak them the spicier they get. I soak 30-45 minutes. WARNING . . . if you fail to add ice or cool down the water, you'll overcook the crawfish. You'll know because they'll be rubbery and/or be hard to get out of the tail. Happy eats.

Not tryna b a smartass, but if I leave the crawfish soak in water for 25 minutes after it's finished boiling,, won't it make tge crawfish soggy?

@johnnyguilbeau After the first 5 minutes of boiling with the flames on, you are not finished cooking the crawfish. The 25 minute soak afer cooling the pot finishes the cooking process without making the crawfish soggy.
