Learn from Green Deane about Henbit, a spring green wild food you might not have noticed, a slightly different taste than other new greens.

  • Are the stems edible on this plant? I just transplanted some for indoor growing and was wondering if it can be treated kind of like purslane. Thanks!

  • @outsiderdf well... yes, but they are a bit tough and not that tasty.

  • You also mentioned purple deadnettle (which is in my front yard).

It doesn't smell too appealing. Is it best to cook or ok to eat raw?

  • @oshuatee Either can be eaten raw or cooked, but neither have much of an aroma. Do you have the right plant?

  • I am floored. I had no idea you could eat that! Henbit is EVERYWHERE around here! Oh I am gonna have just POTS of this in a few months to eat!

  • Enjoy... we know what you'll be doing in the spring...

  • My wife and I have eaten it lightly steamed with vinaigrette. She really liked the flavor as did I. We used the stem and all, and at least in that preparation the stems didn't seem too tough.

  • The still photos add a LOT. I would feel much more confident identifying it after that.
