As an end of term demonstration I made liquid nitrogen icecream for my senior year 13 students. The hype spread through the school however and other students turned up to watch.




Essentially liquid nitrogen freezes the water in the milk/cream so fast that only small minute crystals form, at the same time as frothing it up through the rapid boiling of the gas. These two combined makes a smooth frothy icecream.

Ingredients:
500 mL Cream
500 mL Green Milk
~ 250 mL (a cup) of Castor Sugar
5 mL Strawberry Essence
5 mL Vanilla Essence
4 drops Red Food Colouring

Mix together as shown, then pour in roughly a litre of liquid nitrogen slowly.

    70% of the air you breathe is Nitrogen. Ingesting it is not going to be detrimental
