The Head Chef of the famous Al Halabi Restaurant at the Four Seasons Hotel in Damascus, Mr. Mohamad Helal and his Assistant Chef - Mr. Mohamad Moussa were in Bangkok this month to show guests of the Four Seasons Hotel there what Syrian and in particular Aleppean cuisine is all about.
Every evening between 12 July and 23 July they served up some of the most traditional dishes from Aleppo and other parts of Syria, at the Aqua Restaurant.
ASIA Travel Tips.com took this opportunity to speak with the Head Chef, with translation kindly provided by Mr. Moussa. In the interview, which was filmed in the kitchens of the Four Seasons Hotel Bangkok, we ask Chef Helal what Syrian food is all about, how Aleppean cuisine differs from that of Damascus, what types of food they will be serving in Bangkok, whether Makkadem is on the menu, and lots more including how the Four Seasons Hotel in Damascus has been affected by the recent trouble.
