I don't know, I haven't done this myself. All I can suggest is to make sure you don't join the friend's game while your file is loaded, and to make sure you're clearing the cache correctly.

Apparently, this can be fixed if you:
- Join a friend's game online
- Save and exit
- Exit the game without reloading the bugged save
- Clear the 360 cache, and reload the game. When it asks you to update, refuse and go offline.
- Load the bugged game.
- Go back online and get the update back
