Pretzel Rolls, similar to Pretzel, authentic German recipe, authentic German cook :)
This is an easy to make roll with the extra flavor of a pretzel. subscribe me for notifications. Let me know if you have questions.
Guten Appetit.

Makes 12 rolls

1.5c (12 oz) cold water
34 g (1/6 c) vegetable oil (liquid)
1 1/2 tbsp SAF "Perfect Rise" yeast (previously branded "instant" yeast)
1 tbsp kosher salt
1/4 tsp sugar
1 1/2 tbsp SaCo buttermilk powder

1 1/2 lbs unbleached all-purpose flour

1 liter lye dip (40grams lye pellets on 1 liter or 1 1/3 oz on 34 fl. ounces)source from www.aaa-chemicals.com

Pretzel salt (or coarse kosher salt)

Heat oven to 475°F.

    Hi, the buttermilk adds butter to the dough. The oil will make the outside shiny without leaving it greasy. Try more butter and let us know how it turned out.

  • Thanks for the demo. When you were adding ingredients to make the dough, you added salt, but at the end, you do not list salt in the ingredients. How much salt do you use in the dough? How much do you use for sprinkling on top of the rolls?

    Hi, You can try 1 tsp for the dough. Add more if the rolls turn out bland but considering that salt is sprinkled on top, you should be fine.

    For sprinkling you should consider Kosher salt which is coarse and not only looks better but also won't soak into the roll before baking.

  • Just wanted you to know that I make these rolls all the time now. The video was so helpful and this is a no fail recipe. My husband and I made our first trip from the US to Germany in May and we couldn't get enough of the rolls over there. Everytime I make these rolls it reminds us of our wonderful trip.
