by doing the late salt addition you also get better water absorbtion and gluten development, great video!

This looks so delicious and nutritious. Thanks for explaining the chemistry of it all too - it is the first time I have realised that our basic food is all around us, combined in the elements :yeasts in the air and flour from the soil, coolness of the water and heat from the fire combined by human willpower and patience for this wonderful result! And not that much kneading required thank goodness. Just our basic need for good food.
