What GI does celery root have when it's fried? Cause I love it so much and eat a lot but i'm scared if it has high GI it's gonna ruin my lowcarby diet =)

@ihatecarbs The "GI" or Gycemic Index, is a measure of the effects of carbohydrates on blood sugar levels. Since oil is 100% fat and has no carbohydrate frying celery root will not affect the GI of the vegetable. Celery root is one of the vegetables on the low-carb food list and can be eating on Atkins Induction as well, just remember to count the carbohydrate of the portion size you are having : )
