【材料】:帶骨小排骨1斤、沙拉筍1支、黑木耳1片、蔥末1大匙、薑末1大匙、蒜末1大匙、酒1大匙、醬油1大匙、太白粉1大匙、辣豆瓣醬1大匙、糖1小匙、醋1小匙
【做法】:
1、先把醬油倒入排骨中讓排骨均勻上色。
2、起一油鍋約130度的油溫,再把上好的排骨放入油鍋泡油約五分鐘。
3、把沙拉筍切片後再切丁,黑木耳切丁。
4、起鍋熱油後先把辣豆瓣醬放入鍋中煸出香味後,再把蔥末、薑末、蒜末放下去炒香,接著再放入筍末,醬油和一杯水;再把酒、糖放入鍋中調味。
6、接著把油好油的排骨放入鍋中轉中小火燜煮。
7、起一鍋滾水先把青江菜的梗放入先燙軟接著再把青菜全部放入,等顏色變脆綠後撈起放入冰水中冰鎮。
8、再把冰鎮好的青江菜放入盤中裝飾。
9、等到湯汁快收乾時,加入白醋嗆鍋和少許的芡汁最後再撒上蔥末、即可起鍋盛盤。
