"fleurine" not "fluorine". It has nothing to do with fluor. It's a natural cavity in the rock through which air passes and allow the growth of real Roquefort.
Im guessing the Fluorine in the rock controls the groth of the mould. Fluorine is toxic to all life but if its fluorite in the rock it would be released painfully slowly.
