@healthyvegan Yeah it is a little be challenging. I'm just getting excited to start adding more vegan meals to my diet. I hadn't planned on becoming vegan, but it seems I'm leaning that way. Thanks for all the great info!

how much water did you use for the pasta? I'm using brown rice/corn pasta... it calls for 4.5 quarts... about a gallon and 16 oz. right?

What is the healthiest type of pasta to buy? Whole wheat? Spelt? What is the difference between the types and how does it effect your body?

@MyNamelsJohn any whole grain pasta is fine - kamut and brown rice are other good ones. I've also seen corn, quinoa and buckwheat. Whole wheat, spelt and kamut are all closely related, and wheat in particular can often be an allergen. If you don't have a reaction to it, those ones are all great and help to build up your body. Brown rice is the least allergenic and usually easy to digest. Quinoa and buckwheat are easy to digest too, though corn can be an allergen. I always say go for variety :)
