I'm not sure "more intensity" works for everybody. Chris Rock (loud, aggressive, very un-PC) does it well, but Janeane Garofalo (dry, sardonic, deadpan) doesn't need it. Could be that this comedic persona isn't overly clear yet. Seems like this character's going in the direction of the "Apple Pie" kind of lady. Maybe if Miss Maudie Atkinson from To Kill a Mockingbird had even more of an acid tongue. Personally I think phrases like "You know what I mean" and "Swear to God" weaken the joke.

When you do those act outs maybe try to do it faster and with more intensity. And when you say things like a 'swear to god' or 'I'm just saying' try to extend the phrase out longer and look around the audience.
