http://vc4c.com/ Vegan mashed potatoes and Blueberry Buckle. Cooking a vegan meal doesn't necessarily mean you have to use a vegan recipe. I like to do what I call veganizing, where I take a regular recipe and make it vegan. Although not every recipe can be made vegan, most can. With years of practice under my belt, I've veganized everything from beef stroganoff to pecan pie.

  • Try poaching raw garlic in the milk separate from the potatoes. Then once you've boiled the potatoes reserve a portion of the water (1/2 to 2/3 cup). Add butter, milk and poached garlic to the potatoes. Whip. Add in potato water as needed to achieve the desired consistency. Remember that potatoes hold their heat well so you should try to plan on finishing your potatoes 10 minutes prior to serving.
