This is a very good demonstration! One question though, won't you waste a lot of energy in the rheostats? Why not use a linear regulator or transistor?

It actually waste a lot of energy, PWM is the best to control such motor. However, rheostat is cheap and readily avaliable.

I use one at first, but I found using two is better for me to control the speed.
