Greetings! It's the middle of the week, and we are half way to Friday! Yay! So, because I did not plan anything specific for dinner and I didn't know what to make, I thought about eggs because we haven't had them for dinner in a while.

Now, making breakfast for dinner can be more of a pain than not. It makes a giant mess and when your bring up the topic of omelette, everyone wants something different. Some people want cheese, some want ham, some want sausage and Rick always wants bacon. He always wants bacon anyway, so what to do? Make one big omelette in the oven, one way and everyone eats the same thing. There is no big mess and all you have to do is serve a green salad and some bread or like I did, some fried potatoes on the side. Everyone is happy and there are even some leftovers for breakfast tomorrow!

You can make this anyway you like it, just because I only used some ham and cheese and some re-hydrated mushrooms, doesn't mean that you can't add your own twist, like broccoli, bacon, onions, tomatoes or even some leftover steamed salmon and goat cheese would be nice. Your choice. Clean out your fridge, save money and eat like a king!

  • @bearlysceneranch I got that bender for $50.00 on ebay! It is a factory return, refurbished. If you look for them, you will find them. The white ones are easier to find. I had to have yellow, it matches my mixer and my food processor. I was lucky enough to be able to afford both of them last year. I am a total Kitchenaid snob. Rick gave me a stainless steel kitchenaid coffee grinder for Christmas and I totally love it!

  • just put this in oven but put cheese and chive dip in instead of cottage cheese, cross fingers, and two more eggs

  • Noreen, notice you have burns on your arms like mine from reaching into the oven!!! I get so totally focused when I cook that I sort of forget to protect myself. Dare to say I will not change since I am in my early 60's and I recall my mother also having varying degrees of those marks.
