Episode 207: Layered Elegance. Minute Recipe: Rice Paper Rolls with Avocado and Sun-Dried Tomatoes. Jacques shows his daughter Claudine how presentation can make a simple, traditional dish truly elegant by layering feta, cucumber and onion with tomato slices to make his Tall Greek Tomato Salad. Poached Salmon in Sour Cream Herb Sauce follows as Jacques reveals his father's dislike of olive oil to Claudine. Together they make a variation of his mother's recipe, Stew of Peas and Carrots -- a meal in itself! Dessert is pure simplicity with Sweet Riccota Gateaux with Peach Sauce.

  • I've never seen anyone who's mastered knife skills the way he has. His technique is just awesome to watch. I'd also highly recommend his autobiography to anyone who hasn't read it.

  • he puts his finger on his nose twice, at 2:19 and 2:37, if you pay attention there is a nose crap on the onion that got stuck in his finger before

  • I think the reason Claudine seems slightly clueless is to have an excuse for Chef to "teach." She plays the role of asking questions viewers may have so Chef isn't constantly lecturing to a television camera. At the same time, as long as she's cooking on his show, I'm sure she wants to do things the way he wants.

  • I love watching Jacques cook however, I'm not so fond of him cooking with his daugther or Julia. I just want to see him they seem to slow him down and be in the way.

  • If I had to cook for a chef I'm sure I'd be nervous and over critical of my technique too.

  • His daughter is ok but looks clueless as to what to do with the receipes, don't the producers coach her or tell her anything about what will be cooked on that show ? It's like the first time she has been in the kitchen, didn't she grow up with the guy ? I know chefs do 14-16 hour days but come-on.
