2 pours, 1 for pad & 1 for pier. Pier had a plywood frame bolted together. We did not backfill until entire foundation was cured.. Good luck & please share the video of your project!!!

about to build a site in AL and I got the similar foundation, do you pour the pad first and then backfill while sleeving or placing a sonotube around the caisson/pier and then pour that. or was it a one pour deal.
