  • @BangItzKay some do, some dont. It all depends on the spot. If you're using high quality imitation crab which is more expensive than you imagine. It has good flavor and good texture. usually they come individually wrapped in package. Now when you are dealing w/ a package of imitation crab that comes in one big chunk mashed together that one is not as expensive, lacks flavor, texture, and sometimes not as moist as customers would prefer. so the answer is kewpie.

  • at my restaurant, we ground up the artificial crab meat and cucumber separately in a food processor, then mix together in a bowl: ground up artificial crab meat, ground up cucumber, a little bit of snow crab meat, and japanese mayo. we rub a little tobiko on the rice, then put on the crab mix and avocado and roll it up

  • It's always a plus when some1 handles my food using gloves, but when it comes to making the perfect sushi, i think you have to use ur bare hands. Not entirely sure the reason for it but i guess it has to do with utilizing the moisture on your hand.
