How well does it keep in the fridge?
I'm going to have to try this recipe out, it looks great! I have avoided fauxtatoes since the horrible turnip incident of '04.

Have you ever steamed the cauliflower instead of boiling it? I find that steaming it soft makes the cauliflower less wet and soupy. I use a steamer basket. You do not have to use the paper towels as the cauliflower isn't very wet at all. I use a food processor and add the flavoring stuff. I got this idea from Linda Sue.

Terrible waste of paper towels,shame on you, you could have steamed, or nuked them! The fat count must be off the chart! I still love my taters!

How come there's so much butter/cream/cheese when this is supposed to be a low-carb recipe? (Yes I know that there is no carbs in these ingredients, but surely all the fat isn't good for weight loss!)

@roseism Great question, roseism! Actually, a HEALTHY low-carb lifestyle is one that is high in dietary fat, moderate in protein, and low in carbohydrate. Removing carbs from your diet requires your body to use another macronutrient as its primary fuel source and that's where the fat comes into play. Your body CRAVES fat and needs it to function properly. We've been led to believe dietary fat will be harmful, but there's no evidence of this in the science.

When we make this we use and electric steamer. I highly recommend them for low carbers. Quick and easy, you can even make hard boiled eggs with the steamer.
Last time we made mashed cauliflower we put it in little ramekins and topped them with cheddar cheese and then browned the top under the broiler. Then topped them with some sour cream. MMMMMMMMMMMMMM good! Would be even better with bacon too.

I love this recipe since I lovee mashed potato ,but since I'm on a diet and can't eat it anymore now I can substitute potato with cauliflower!!
