Just saw your reply, and even though it has been quite a while since I asked, thank you much for following through. Keep up the great work! Although I haven't had the chance to grill via plank, I have enjoyed the marinade on my salmon.

Very nice technique with the salmon steak; rolling. Question, since wet wood does not smoke (it steams), why soak the plank at all?

@vincef329 If you do not soak the plank it will be reduced to ashes in the BBQ. As you can see in the vid there is the required smoke (not steam) coming from the plank. Truth is I should have soaked the plank for this vid for at least an hour as it did catch fire on the edges, which normally when I make this that does not happen.

First question I have to ask is, "why didn't you buy a fillet instead of a steak"??

A salmon steak can be sliced to a desired thickness and once prepared the way I do is uniform in that thickness throughout. Also I have found that the price per pound can be lower as a steak than a boneless filet.
