To capture a snip of a menu:
1.Open Snipping Tool
2.After you open Snipping Tool, press ESC, and then open the menu
3.Press CTRL+PRINT SCREEN..
4.Click the arrow next to the New button, select a snip type from the menu, and then use your mouse or tablet pen to capture the menu.

I've been using Win7 for over a year, since beta, and I'm still learning new things. I'm actually quite embarrassed that I just recently learned of this program; as I've been PrntScrn'ing, pasting to Photoshop then cropping, for almost a decade.
Tip: If you take screenshots often, assign this program to a shortcut key by right clicking the shortcut->properties->shortcut tab-> Shortcut Key.
Nifty thing is, whatever you snip goes to clipboard so you can paste into whatever software.. or save.
