Those are colored spots from the drying process

That gourd looked not to healthy it was way to many holes

No problem, but if you are giving it as a gift, I don't think they would want to see the insides of it...
in which case, just make the hole for the "birds" without drainage, soak the inside for a bit, then when it rehydrates it will be easier to pull out.
