Chef Mayras Tofu Chicken NOT Salad
1. 1 package tofu (firm or extra firm)
2. 1/2 cup vegan mayonnaise
3. 1/2 cup onion, diced
4. 1/4 cup green pepper
5. 1/4 cup red pepper
6. 1 teaspoon cumin
7. 1 teaspoon parsley
8. 1 teaspoon basil
9. 4 pita pockets
Directions
1. Cut tofu into 1/2 cubes and fry till golden brown, Mix tofu with mayo, onions, peppers and seasonings (use whatever seasonings you like).
2. Add more or less mayo depending on how"wet" you like the salad.
3. Best served in a pita pocket.
UM Serve with fresh organic Tomatoes!
No Bread? Serve on a Crisp piece of romaine or mustard green.
