8-Layer Game Day Dip

2 garlic cloves

1 medium green bell pepper, chopped

1 jalapeño

1 red onion, chopped

1 pound ground chicken

1 Tbsp Lime juice

12 ounces black beans

3 roasted red peppers

3 cups Mexican cheese blend

2 cups guacamole (already prepared)

1 small container sour cream

2 cups lettuce

1 jar of salsa

In a skillet, place the garlic, chopped green bell pepper, jalapeno and half the chopped red onion with a little extra virgin olive oil and cook until onions are clear. Mix in the ground chicken and cook until browned. In a separated pot, add remaining chopped red onions and drizzle of olive oil and cook until clear. To that pot, add lime juice and black beans. Stir well and cook until beans are hot.

In a large baking dish, begin layering the dip, starting with the ground chicken mixture. Top the layer of chicken with strained black beans, then a layer of roasted red peppers and layer of Mexican cheese blend. Place in the oven at 350 degrees and bake for 15 to 20 minutes or until the cheese is melted.

After baking, top with layers of guacamole, sour cream, shredded lettuce and salsa. Serve with chips.
