@jharrell23867 you are correct about one thing, Creole is a mix of genealogy. The cooking is part of the culture same as cajun cooking is part of the culture. I would like to ask where were you born/raised and where do you live now? I was born and raised in Eunice La. and now live in Lafayette La. and I have been eating gumbo for 40 years now and have been cooking it for 24 years (since age 16). I learned from my grandmother who was born and raised in Durald which is between Eunice and Mamou!

Maine was an exclave of Massachusetts until 1820, when as a result of the growing population and a political agreement regarding slavery, it became the 23rd state on March 15 under the Missouri Compromise.

@thebikedude You sir are a idiot. Acadia was sold to the U.S. and is called Maine now i think the smallest peace of it may still be in Canada some where but most of it is in America. Only the Acadians that ended up in Louisiana are Cajun all the rest are just regular Acadians and are not Cajun at all. Creole means mixed genealogy and culture and is used to describe many peoples in Louisiana including Cajun's. If your from Canada or Maine and you have Acadian blood your still not a Cajun.

@nolimitexec Mamou is in the heart of cajun country JACKHOLE! Cajun country is where the Acadians from Acadia Canada settled. There is more Cajun french spoken there than any where else in the country. In the New Orleans area that is more CROELE and is a similar style of cooking. Paul Prudhome is from Opelousas which is only 25 miles from Mamou. Any thing else you want to know about "CAJUNS"???

I must say the Gumbo and the Roux was nice, but you never add the red bell pepper, that early, as it gives to strong of a taste and changes the flavor completely, as you want to taste each unique flavor in the Gumbo, seafood types, etc,. Red bell pepper when cooked to early, overpowers the taste. I come from 4 generations of Gumbo makers and my grandma, who's still alive made Gumbo for her restaurant in the 30s in N'awlins, as she says! Grandmas is an amazing cook.
