Slicing a whole tuna for Sashimi (Street chef)

I was invited to a Street Chef Show which breaks up a whole Blue-fin Tuna into Sashimi & Sushi on a street. The Blue-fin Tuna is the most excellent food fish and costs almost $2-30,000. Especially, "Otoro",belly of tuna with a high fat content, tastes very soft and melts down in my mouse.
