@MoyraAngel not necessarily true, getting more vitamin A doesn't improve night vision per se, but rather prevents night vision from becoming abnormal

no way!!!? helps with bronchitis!!!?? i totally have that right now. i just looked this up cause i love carrots =P i swear i could eat carrots all day. also alton brown is the coolest. i wish he was my dad =)

@stdrange the grateing carrots is alot quicker and easier than the way Alton does it, but a food processor gives you carrot mush.

Do yourself a favor and just grate the carrots, especially if you have a food processor. Doing it with a peeler like Alton does takes FOREVER.
Hmm. Actually, carrots are good for your eyes. And so is broccoli and other veggies. But if you already have some predisposition to having bad eyes your diet will not help prevent the worsening, just slow it down, and only marginally. Depending on your conditions it may be not about vitamin deficiency but the shaping and distortion of the eye.
