I have trouble thinking that, noble ladies would jump around, am I wrong??

This choreography was not intended for noble ladies, but for professional dancers. It comes from a1712 collection of stage (not ballroom) dances.
The dance would have been used in an 18th century revival of Lully's "Atys", when ballets were less often staged at the court and by members of the aristocracy. By this time, theatrical dance was moving into the realm of the professional.
