How you make it sounds very nice, the ones I eat is the shop bought rubbish, that lets face it isn't going to be as tasty and better for you.

Well it is real black pudding except no pork products made for the artist with his blood! as an art work made inedible by massive quantities of salt and final drying in the oven until solid.

as for real black pudding the better one do not contain rusk barley or flour the ones I usually make are with pigs ears cheeks fat marjoram jamaica spice leeks garlic black pepper and sea salt and fresh pigs blood no extra coagulants...... filled into beef skins ox runners

Of course this isn't real people Black pudding is made with: Water, cooked pork rind, oatmeal, pearl barley, rusk, dried pork blood, flour,onions,salt, pepper and yeast. I personally like the stuff, but i'm one of a few. To be honest folks sausages contain more or less the same products, like pork rind,ears, cheeks and cuttings from the snout mixed together with rust, herbs and pork meat. The pork casings that they fill the contents into is the intestine lining. So less food snobbery!
