In Jedi knight 3, Jedi Academy, you can eventually learn to use two lightsabers, and also learn to use a double ended lightsaber as Darth Maul used in Phantom Menace

You might want to look for the demo to try them out.

Well.....I used a saber then threw it under the floor..it stood there for a while then eventually fell.....then press the attack button to get it back......but when you kill a Jedi does it do it? becuz u cant pick up Red sabers. The demo doesnt give u any Jedi to fight just Sith

are you sure you got a demo of jedi knight 3 jedi academy? because in the demo theres 2 levels, beforewhich you have to pick in the menu what type of saber/sabers to play with. In the actual game you have to follow the storyline and i think you have to earn the ability to get the other types of sabers. it said so in the demo. Possibly after playing a short while, or as some form of achievement. You might have to pick the right levels.
