The latest version of TablEdit allows for midi input - SO, if you have a midi guitar then you can play directly into teh editor (or a midi keyboard).
TefView is just a player for pre-tabbed tunes - but there is a large number of files (xxxx.tef) out these which you can download to play through TefView and to learn on your guitar.
Search Google for Steve McWilliam guitar for tabs in this format.
You don't record notes, the notes are preprogramed into it. You just punch in the tabs, and you need tabledit. Tefview is just to view what other people have made

You could have taken the notation off from the first page on the options
