This is what I love about Castle... they don't tease the audience as much as other shows. It's all very open and obviously told to us that they love each other, it's just that there's character problems to sort out before they can TELL each other. There are actual problems to sort out rather than other shows, where there's no reason they're not together except for stupid soap ploys to keep them apart.
...which is why I know Castle will still be good when they do get together!!

It cracks me up how everyone new who comes in for an ep says the samething "....you know when I first met/saw you two I would have sworn you were a couple...." Everyone sees how they're ment for each other...except them LOL...but I guess that's part of the fun LOL
