we don't know how much evidence we "could have" this is all speculation. it is almost certain that we do not know everything there is to know, however we cannot infer what is left to be learned by looking at what we have already learned. science works, we understand sub atomic particles and how they act, your computer is evidence of this as it works off of quantum functions. science works.

Science is the discovery of God's work. Humans are the creation of God. Human's attempt to crack the code of science, and think they themselves have disproved God. But in the they, we knew nothing.

You speak of science as if it is a competing entity with God somehow. Science is just the process of learning about ourselves and the world around us by applying previously known knowledge and logic to explain a phenomena.
Of course we know so little, and that's what excites me! That's what makes science so remarkable. There will always be something else to learn, some way to improve one's knowledge. For this reason I can see why some would regard this method of attaining knowledge so high.

I just had to upload a clip of Peter Atkins after this convo, getting owned by William Lane Craig. In part of which he says "science is omniscience" I laughed so hard, his ignorance astounds me. To think even for a second that science knows literally everything is one of the most idiotic things I have ever heard.

Methodological naturalism does not allow for guess work.
Your claims need to be verifiable and consistent with known physical laws and established fact, they don`t jive then then something is wrong, ether the Hypothesis is False or there`s something the matter with our data.
Because of this it is more accurate to call anything extrapolated in science to be a Empirical deduction, which is quite frankly worth more then a mere guess.

When compared to the amount of evidence we could have, it is most definately a guess. Appreciation of our limited knowledge is not something very common amongst scientists, but it is fairly common amongst philosophers who have thought this through. Get the book "What is This Thing Called Science?" by Dr. Alan Chalmers.
One thing my friend (a philosophy professor) made me appreciate, is just how little we actually know.
