Jan McCartan, catering manager and wine director at the Best Western Plus Hood River Inn in Oregon, takes an unusual approach to her house wines. They are made by a local winemaker, award-winning Rich Cushman of Viento Wines, who delivers them in refillable canisters. The Riverside Restaurant house wines are dispensed via a tap system. They never see a cork. There are no boxes. The only time the wines spend in glass is when they are poured for diners.
