Pieced together NASA videos to simulate Launch, cockpit, Solid Rocket Booster Separation, Extenal Tank Separation, and Space station docking. Flight times have been greatly reduced to make the video more interesting. Also the ISS docking is rolling extremely fast as it takes days for the shuttle to catch the ISS and then hours to preform the dock.
This is the actual launch of STS-65 in 1994. This is not a simulation.

More than likely, it's to check the instruments and switches behind them. Hard to turn around with those helmets on.
