when cellered longer than 6 months, the free sugars become alcohol. the bitterness will dissapear. at that moment the orval becomes an 'ambassadeur'. orval beer may be served to diabetic people and is unique for this. find out the story about the fish that holds the ring in the emblem! greetings from belgium. i get to enjoy orval every day.

Personally, out of all the Trappist beers I've had (this one, all 3 Rocheforts, both Westmalles, and Chimay Blue), I gotta say this was the only one I didn't like. Felt too carbonated and too dry, much like champagne IMO...

So far, this beer follows right behind Chimay. Woodsy and flavorful with a dry finish. Love it!

Hey Greg. I've just started reviewing beer online and Orval is my second (and most recent!) review. My bottle was september 9 2011 and was 6.2% ABV and so was the one I had a year ago, not 6.9%! Wonder why that is?! Very nice in any case. Check out my review of De Hemel Niew Ligt Grand Cru 2009 (Dean's Beer Reviews), a Dutch barley wine. I've nver seen anyone else review this so perhaps you could grab a bottle and do it. Would be interesting to see someone else's opinion of it. All the best.
