材料:高筋麵粉310g、蛋25g、細沙糖37g、鹽6g、速溶酵母12g、奶粉9g、奶油37g、水164g、紅豆餡

做法:先把高筋麵粉、速溶酵母、奶粉、細沙糖、鹽、蛋、水一起倒入攪拌鋼盆中,用慢速攪拌直到讓麵筋形成,之後再把奶油加入再進行攪拌,開中快速攪拌直到麵糰呈現完成階段­,可取一小塊從中心撕開,而撕開的邊緣會整齊呈現這樣即可,再來滾圓麵糰放入調理盆中用保鮮膜蓋上讓麵糰發酵,環境約27~28度靜置60~90分鐘即可,發酵後切塊用磅­秤量60g為一團,再來把小麵糰用手混圓後用紙蓋上讓他靜置鬆弛一下,再來把紅豆餡分成適量的小塊狀,把鬆弛好的麵糰取出把紅豆餡放入麵糰中用手收口麵糰,再把每一個包好­的麵糰噴上一些水來沾裹麵包粉,之後再壓一下略圓扁型之後再整個用紙蓋上在密閉空間靜置發酵40分鐘呈現一倍大即可,再來準備油鍋溫度好之後把麵糰放入炸,放入後馬上翻面­持續翻面,炸到兩面金黃且略壓會有彈性即可撈起裝盤,這樣就完成紅豆多拿滋。
