I'm a big beliver in OXO kitchen products, great grips, great performance, durable. The safety handle on the mandolin finally gave me confidence to use one -- other all-metal ones were too scary. Thin thin slices, plus julienne and waffle-cuts, easy to clean. I first had these herbed potato chips in the restaurant Remi in NYC and found that they were really easy to make at home because the OXO mandoline slices the potatoes paper thin, so the herbs show through. I used sage, rosemary, parsley and oregano. Salt and pepper. Takes 20-25 minutes in a 350 degree oven. So very very good! Make sure to make plenty.
