Hey I just thought I'd let you know: cane sugar is 50% glucose 50% fructose. High fructose corn syrup is I believe 45% glucose and 35% glucose (there's multiple kinds of HFCS). I guarantee that anything you serve in your restaurant that has ANY sugar (natural or refined) has glucose.. Being such a health nut you should know.

The comment about sulfites and salt peter is not correct. Salt Peter is Potassium Nitrate and it is not used in food and was not used in food. It is used to make gun powder. Sodium Nitrite or sodium nitrate is added to regular salt to make a meat curing salt used in sausages. If the sausage turns red when you cook it it has curing salt in it. It is specifically needed anytime you are smoking sausages to prevent botulism.

Sulphites cause asthma, mood swings, fatigue and high blood pressure.
my husband says that sulphites also used to be called salt peter....used for men in the wartime so they could keep their libido low. yikes!
