Here is the recipe:
1 lbs. of pork loin chop cut into 1/2 inch pieces
1/2 diced onion
3 garlic cloves diced
1 cup favorite salsa
1 small can of chipotles in adobo sauce. (dice down the peppers)
juice of 1 or 2 limes (use 2 if you love lime juice)
Place all in a ziploc bag and refrigerate for 3-4 hours
pull out of refrigerator and bring to room temperature
Saute mixture in pan until pork is fully cooked.
place small amount of pork mixture in tortilla. Add taco toppings that you like. mexi cheese, sour cream, avocado, diced tomatoes, shredded lettuce, etc.
