@benjorgensen1 Lycopene and carotene are what give some fruits and vegetables their color and are antioxidants. What research did you find that said tomatoes, carrots, spinach, watermelon, pink grapefruit, etc. are not necessarily for humans?
Spinach, likewise, is more easily digested when cooked and we absorb more nutrients from it. There is an interesting book called "Catching Fire: How Cooking Made Us Human" that hypothesizes that the discovery of fire and cooking food opened us op to new nutrient sources and actually catapulted human evolution. A raw vegan diet may be good for early hominids but modern homo sapiens need some cooked food to fuel that big brain.
sorry Mr. Furman(and i know this isn't his channel) but beans, mushrooms, lycopene, and carotene are not necessarily for humans anyhow! cooked or raw, beans are not healthy foods! and further more, WE ARE THE ONLY CREATURES ON THIS PLANET THAT COOKS OUR FOOD...AND WE ARE THE ONES THAT HAVE HAD THE HIGHEST FREQUENCY OF DISEASE OF ALL ANIMALS! of course we are also the only ones that modify and process our food until the body can't recognize it.
Dr. Fuhrman: Long time ago I read a book "FIT FOR LIFE" in it Harvey and Marilyn Diamond speak of the same things you do. You have explained them more fully. Have you read this book or were you inspired by ideas in it?
