Excellent playing, and a beautiful song. However, I do not think that this is Postlude in C major, as your book states. I am not even sure this is even Händel , nor that this is a postlude. I know that I have played this a long time ago, on the bassoon. I did some browsing on the web but yours is the only Postlude in G major by Händel which goes like this, which indicates that this might be another track (and maybe another composer as well). Please let me know if you find out more!

I have this in a collection - in the collection it is called "Postlude" probably because they are indicating its intended use. Did Handel call it Postlude - I'm sure he didn't.

It is indeed excellent, but there is one thing that bothers me slightly: none of the organs Handel played in England was fitted with pedals at the time. Would it have been possible to play this piece without using the pedals?

Yes, most definitely, could play it for manuals only.
