The trick to do this is to not let the fleshpound rage. As long as he stays in his passive state, you can kite him across a map while taking pot shots at him. Fleshpounds will rage if:

1) They take over 360 damage within a 2 second span
2) They don't attack you over a period of time.

#1 is easily avoided as melee weapons won't cross that threshold since fleshpounds have 50% resistance to melee weapons. The trick is to prevent #2 from ever happening. To do this, you can either continually break line-of-sight or run into their attack zone and then run back out as he swings his fists. Only a berserker and medic have the speed bonus to dodge the fleshpound melee swings as specimens move 1.3x faster on suicidal.

The axe is the best weapon to down an fp. It does the most damage per swing but you will need to get a hang of the timing so you don't spend too long in the fleshpound's strike zone.. Katana is a viable alternative as it has a fast swing rate but still decent attack power. Medics should use the katana for the swing speed while berserkers can use the axe due to their faster melee swing speeds.

Once you get into your rhythm, just keep the dance up. If the fleshpound has little guys surrounding him, take them out first. Use the LOS trick to keep the fleshpound from auto raging while you take out the support specimens.

To see a zerker doing it with an axe, see below video. Time marks are in the video's description (it is a long video).
