Chef Remy explains that many restaurants make their own on a larger scale but it is still the same method explained in the video. The better grades of olive oil render better taste; this is most important. Try using all-purpose Italian seasoning herbs as shown in the video for better results. Chef Remy's sprinkler contained marjoram, thyme, rosemary, savory, sage, oregano, and basil.
INGREDIENTS:
5 - 10 slices day old bread 2 Tbsp olive oil
1 Tbsp Italian dried herbs 1 Zip-Lock baggie, qt. size
1 tsp Kosher salt ½ tsp fresh grind black pepper
2 butter patties
METHOD: Use a zip-lock baggie with a "click-lock" device. First add the best tasting virgin olive oil you can afford. Then add Italian seasoning, salt, and pepper. Kosher salt has a brighter taste and distributes more easily. Cut crust off bread and discard the crusts. Bread that is days old is fine. Cut bread, five slices at a time, in the manner described in the video to render bread cubes. Add bread cubes to baggie and shake well. Melt butter and olive oil in a nonstick sauté pan over medium heat. When butter ceases bubbling, add seasoned bread cubes. Toss croutons until golden brown while testing for taste and salt.
