The RCPowers T-50 / Pak Fa V1 speed plane.
Mine is a fairly "middle fo the road" setup as far as speed is concerned. An RCTimer 2826-6 2200kv motor, 6x4 prop, 30A ESC, and a 1600mAh 3s 20C battery. It's not the fastest plane out there of course but for a reasonably scale-looking Parkjet it's doing very well!
I really don't see upgrading the motor beyond this unless you plan on using a 4s battery. With a bit of effort you could certainly fit a battery this size in! Moving up a motor size and staying on a 3s the weight becomes an issue and you won't really gain much in the end.
For this motor my battery is a little on the small side but with a bit of throttle management it does fine. Being so aerobatic at slower speeds you can still be flipping around the sky while you are giving it a rest to cool down and let the battery catch up.
All up, a very fun and versatile plane.
That place has some serious speed.

I think this is exciting that Scott and Dave didn't know the potential speed of this plane during the plans development! Like Dave says, they discover these planes. For those who don't get it, that's a scratch built with medium power! Yeah baby!
