Crab Dip Mornay
Ingredients:
1 pint (16 oz) Half and Half
1 Cup of Habenero Cheddar Cheese (Any Cheese you like will work)
1 Cup of Colby Jack Cheese (Once again your preference)
1 Tbsp White Wine
1 Tbsp of Creole Spice
2 Tbsp butter
1 ½ Tbsp flour
¼ Cup of Cajun trinity (Equal parts Celery, Onion, and Bell pepper)
1 Tbsp Oil
1 pound Lump Crab Meat
2 Cloves of Garlic (minced)
Directions:
Add oil and butter to a non stick pan on medium heat. As the butter begins to melt add the Cajun trinity and garlic and allow to cook on medium heat until the vegetables begin to soften. Next add the flour and allow is to cook with the butter and vegetables while stirring for 3-4 minutes. Add the half and half and allow the mixture to come to a simmer over medium heat (This step could take up to 15 minutes. The half and half may also be slightly warmed for 1 minute on high in the microwave). After the cream reaches a simmer add the white wine and slowly incorporate the cheese while stirring. To complete season the sauce with the Creole seasoning (more may be needed depending upon the salt preference). Finally Move the sauce to an oven safe dish and gently combine with the crab meat. Top with the Colby Jack Cheese and allow to broil for 3-5 minutes or until the cheese is golden. Serve with baguette slice, Tortilla chips, or Corn Chips. Enjoy!
Notes: White wine is not necessary, a squeeze of ½ a lemon would also do the trick, the idea is to add a little acidity to cut the richness of the sauce
Any kind of cheese can be used just keep in mind the ones that melt nicely will be easier to work with.
