Maille is also my favorite brand of Dijon mustard.

I'd like to see you use other types of oil and vinegar too in your recipes. (Now, it makes sense to use olive oil in a vinaigrette...)
A very nice combination is hazelnut oil and xeres vinegar. It goes very well with strong flavoured meat (especially game)...
