@Pepsicarwash Castor sugar is just superfine ground sugar, you can simulate this by pulsing granulated sugar in a coffee grinder. I substitute powdered sugar all the time when castor is called for, because really they just want the sugar to sink in more so than granulated can. You can buy castor sugar though, it just may be called "superfine"

hey chef! this truly does look fabulous. can't wait to try it. may i ask what that other sugar was called u used in ur other recipies? the one with bigger crystals that kind of looked brown. i live in U.S. and haven't seen it here yet. thnx! oh yeah! MERRY or HAPPY CHRISTMAS!
